Technically speaking, Sencha is grown in full sun, but this tea is shaded for 18 days before plucking. This makes it more like a Gyokuro, a style of steamed green tea widely considered to be Japan’s finest.

This unique kabuseru process brings out a rich umami flavour, as well as a lingering sweetness.
